Veggie Noodle Bowl

INGREDIENTS….. makes 8 servings

Broccoli

Cauliflower

Zucchini

Sliced Mushrooms

Carrots

Onion

Vegetable Broth

Noodles

Spinach

Soya Sauce, Vinegar, Sesame Oil

Salt & Pepper & optional Siracha

DIRECTIONS:

Take a Large size pot and fill with

1 cup Each Broccoli pieces, Cauliflower pieces, Zucchini chopped, sliced Mushrooms, Carrot slices and ½ Onion diced
Add water (6 cups) with Vegetable broth (1Tbsp), to just covering vegetables……. bring to a boil
Once boiling, stir, cover – reduce to med / low heat, to soften vegetables. (5 – 10 mins)
– add noodles (any kind you like) to pot and soften
– add 4 cups spinach leaves and mix till incorporated….
Drain the water, and keep 1/2 cup vegetable broth
Return Veggies to pot / and heat with

*the reserved 1/2 cup vegetable broth, 2 tbsp soya sauce, and 1 tbsp Vinegar, 1 tsp sesame oil, salt and pepper and mix well

(siracha optional) and heat till warmed.
