Vegetable Barley Soup

INGREDIENTS

Package Pearl Barley

Oil & Butter

Red Onion

Carrots

Celery

Garlic Cloves

Salt & Pepper

Beef Broth

small can Tomato Paste

Bay Leaves

Celery Salt, Onion Salt, Garlic Salt, Thyme, Paprika, Basil, & Chili Powder

Balsamic Vinegar

Frozen Peas

DIRECTONS:

Soak 1.5 cups of barley overnight in large bowl of cold water, about 1 inch over barley
In a Dutch oven add 2 tbsp oil & Butter
add…1 Red Onion diced
3 Carrots chopped
3 Celery chopped
3 Garlic cloves crushed
Salt & pepper
⦁ Sauté till fragrant
Add 10 cup Beef broth
1 small can Tomato paste
2 Bay leaves
¼ tsp Celery salt & onion salt
1/8 tsp garlic salt
1 tsp Thyme, & Paprika
1 tbsp Basil & Chili Powder
⦁ Bring to a boil, reduce and simmer 2hrs….
Add ….½ c. Balsamic Vinegar
2 cups frozen Peas (thawed)
Simmer another 15 minutes, salt & pepper
