2 Tomatoes

DIRECTIONS:
After Cooking the Turkey / Stuffing recipe. Take the Roasting pan and removing the whole Turkey and stuffing and set aside and rest both for 30 minutes to an hour.
Leave All the turkey water, Gizzards, Onion, Lemon etc., in roast pan and
Add 2 chopped tomatoes
Cut off the turkey the wings and add to the Turkey water.
Simmer 20 mins in the oven (leaving Oven on @ 375), covered.
Remove and mash the meat, lemons, onions, tomatoes.
Then use a strainer to remove the liquid into a bowl – and discard the meat, onions, lemon, tomatoes and discard
In a frying pan on the stove, Make a roux 2 tbsp flour & 2 tbsp butter, heat to melted and cook off the flour a bit@ 3 – 5 minutes, (do not burn)
Then ladle in strained liquid a bit at a time stirring and simmering on low to medium till all incorporated, simmering then slowly add…. 1 cup chicken stock simmering and stirring till desired thickness.
