INGREDIENTS
1 Package Firm Tofu
Orange Juice
Soya Sauce
Marmalade Jam
Spring Rolls
Oil
Onion
Garlic Cloves
Red, Orange & Yellow Bell Peppers
Vegetable Broth
Broccoli
Vermicelli
Sesame Seeds (optional)
DIRECTIONS:
Marinate Tofu in large Ziploc bag 2hr to 24 hrs….
with ¼ cup Orange Juice, 1 – 2 tbsp Soya Sauce, & 1 tbsp Marmalade Jam, mix together well
Remove Tofu and place on cookie sheet (Keep Marinate sauce and set aside)
Bake Tofu in oven 375 degrees, with spring rolls on a cookie sheet (parchment paper) till slightly crisp & brown.
Take a large Pot add Oil, mince 1 Onion and 3 Garlic Cloves, & 1/4 EACH Red, Orange, and Yellow Bell Peppers sliced and simmer until fragrant
add to the pot Water till almost full, bring to a boil, season with a good amount of (@ 2 – 4 tsp Vegetable broth, to taste), add Cut pieces of Broccoli and continue to simmer 3 minutes
Then add vermicelli to the hot water and continue to cook till done 3 minutes …..drain water off in a strainer
Return Vermicelli & Vegetables to pot
Add marinate to the pot and heat to a slight simmer on low till fully incorporated and hot.
top with sesame seeds
Tofu and Spring Rolls on the side
