INGREDIENTS….makes @ 4 servings
1 Can EACH Black Beans & Chickpea (drained & rinsed)
Oil
Salt & Pepper
Cumin, Paprika, Chili Powder & Cayenne Pepper
Lettuce
Green Onion
Avocado
Salsa & Sour Cream
Mango
DIRECTIONS
1 can black beans & 1 can Chickpeas (drained & rinsed)
Bake the above @ 350 degrees in oven for 15 – 20 minutes on a sheet pan – 1tsp oil, and season with Salt and Pepper
till softened and Mash Black Bean and Chickpeas
Add 1 tsp Each Cumin, Paprika, Chili powder and dash cayenne pepper
Simmer in frying pan till cooked crisp (ground beef substitute)
In a bowl, take Lettuce, top with (above mixture) & Green onion, Avocado.
Chips and Salsa……..Mango (whatever you enjoy)
