Sweet Potato & Eggs on toast

INGREDIENTS makes 2 servings

1 large Sweet Potato

Oil

Cinnamon

Nutmeg

Salt & Pepper

Eggs

Toast

Directions

1 large Sweet Potato sliced into circles, take cookie sheet add Parchment paper

Drizzle with oil all over sweet potato pieces and a dash Each, cinnamon, nutmeg, salt, pepper, and toss together

bake in oven, 375 degrees, for 15 – 20 minutes, then remove skins and mash

Spread on toast and served top with eggs any style (sunny side up pictured below)
