Stuffed Potatoes

INGREDIENTS

2 Russet Potatoes

Oil

Butter

Milk

Sour Cream

Mrs. Dash or Salt & Pepper

DIRECTIONS:

Scrub outside of 2 Russet Potatoes
Poke through with a fork
Rub Oil all over Potatoes and cover with Tinfoil and place in Oven with the Roast Beef when you reduce to the 250-degree mark for 2.5 hours.

Remove Potatoes with the Roast beef and set aside, open tinfoil and let cool.

Cut off a strip of the Potato skin on top of the potato and remove the insides, with a spoon, into a bowl.

Add to scooped out Potato to mash, 1 tbsp butter, 1/4 cup milk, 1/4 cup sour cream, Dash EACH of salt, pepper and parsley.
Add Mash Potato back to Potato Skins.

Place in oven @ 250 degrees and heat, then serve.
