Steak & Potato Salad

INGREDIENTS

2 packages of Stir-fry Steak Strips

1 Bag of Potatoes

Purple Onion

Worcestershire Sauce

Salt & Pepper

Oil

Plain Greek Yogurt

Mayonnaise

1 packet Ranch Dressing Seasoning Mix

Mustard

Hot Sauce

Vinegar

Paprika

Sweet Mixed Pickles

Celery

DIRECTIONS

2 packages stir-fry strips of Steak & 1/4 Purple Onion (sliced) – salt and marinate in Worcestershire sauce while making the Potato salad
6-7 medium sized Potatoes washed – chop into bite sized pieces then place on baking sheet
  • Drizzle with Oil, and season with Salt, & Pepper
  • Bake @ 20 – 30 minutes @ 375degrees
Meanwhile in a mixing bowl make dressing…..
1 cup Plain Greek Yogurt
½ cup Mayonnaise
1 – 2 tsp Mustard, Hot sauce, Vinegar and Paprika
1 Package of Ranch Seasoning Mix
Stir all together and set aside – in the fridge
Bring a pot of water to boil – add in 4 eggs and simmer (low bubble) @ 10minutes
Remove and add them to cold water and Ice cube bath
In a separate bowl
Chop ¼ cup Sweet Pickles
Chop 3 Celery Stalks
Mix together Potatoes, Dressing, Eggs, Pickles & Celery – refrigerate 2 hours or overnight for best results
Heat frying pan, add oil and cook the Steak strips and sliced Onion and add to Potato salad.
