Mixed Vegetables with Chicken

INGREDIENTS

2 Chicken Breasts

Salt & Pepper

Oil

Chicken Broth

Soya Sauce

Sesame Oil

Hoisin Sauce

Hot Sauce

Apple Cider Vinegar

Cauliflower

Broccoli

Orange & Red Bell Peppers

Onion

Celery

Carrots

Frozen Peas

Spinach

DIRECTIONS:

Chop 2 Chicken Breasts, season with Salt & Pepper
Heat frying pan with oil and cooked Chicken till browned
Remove Chicken and set aside on a plate

In a Frying Pan add Sauce….
2 cups chicken broth, 1/ 3 cup Soya Sauce, 1 tsp Sesame Oil, 2 tsp Hoisin Sauce, 1 tsp Hot sauce, 2 tbsp Apple Cider Vinegar and stir well, bring to a simmer med/ high heat

add, 1/2 Cauliflower chopped
2 cups Broccoli chopped,
1/ 2 EACH Orange and Red Bell Pepper chopped
1/2 Onion chopped
2 stalks EACH Celery and Carrot chopped
simmer on Medium heat @ 10 – 15 minutes, stirring occasionally

add 2 cups EACH Peas and chopped Spinach and the Chicken pieces, continue to simmer on medium heat @ 5 minutes
