Ham, Pepper and Feta Frittata with Perogies

INGREDIENTS…………… Makes 4 -6 servings

Eggs

Sour Cream

Salt & Pepper

Yellow Bell Pepper

Feta Cheese

Ham

Parsley

DIRECTIONS

In a mixing bowl add…
6 Eggs whisked
1/2 cup Sour Cream
Salt & Pepper to taste
1/2 diced Yellow Bell Pepper
1/4 cup Feta Cheese crumbles
2 thick pieces Ham diced
1 tbsp Parsley
Mix /whisk above ingredients good
Spray dish (@ “9×9”) with Pam
Bake 350 degrees in oven for 40 – 45 minutes
Make Perogies….
Fill Pot with water and bring to a boil
add in Perogies, reduce heat a bit, but continue to simmer till they float
remove and place on paper towel
Heat frying pan with Butter & Oil, add in the Perogies and crisp lightly brown both sides
