Curry Pork and Rice

INGREDIENTS…. makes @ 5 servings

1 package of Pork Stir fry pieces
Oil
2 cloves of Minced Garlic
2 cups frozen Peas
4 cups of Chinese Bok Choy
Vegetable Broth
Spices: Tumeric, Corriander, Salt, Pepper, Garlic Salt, Black Peper, & Curry Powder
Minced Ginger
Apple Cider Vinegar
Honey

DIRECTIONS:

Broth Mixture/ Rice
1.5 tsp Vegetable Broth, in 1.5 cups of water and add….
1 tsp EACH Tumeric, Corriander, Salt and Garlic Salt
1/2 tsp Black Pepper
2 tsp Minced Ginger
1 Tbsp Curry Powder
– take 1/2 cup of the broth out to add in Pork stir fry below –
Bring above Broth and Spices to a boil add in 1 cup minute Brown Rice and cook covered on medium / low heat till Rice soaks up the liquid and set aside

Pork Stir Fry
Heat frying pan with Oil, add Pork stir fry pieces
2 minced Garlic cloves, and cooked till browned
add in Broth and the rest of the ingredients below
1/4 cup Apple Cider Vinegar
3 -4 tbsp Honey
1 cup frozen Peas and 1 – 2 cups Bok choy
continue to simmer on medium heat for 7 minutes, stirring occasionally
and serve.
