Cauliflower Rice” low-carb – Sweet Jambalaya

INGREDIENTS…..  makes 8 – 10 servings

OIL
1 Chicken Breast sliced pieces
1 – 2 dash EACH Salt & Pepper
1 – 2 tsp Minced Garlic
1/2 EACH Orange, Red & Yellow Bell Peppers, chopped
1 – 2 thick Pieces of Ham diced
Chicken Broth (mix 2 cups in case you need extra)
1 Can Diced Tomatoes
Seasonings; Cumin, Paprika, Chili Powder, Thyme, Parsley, Basil
1/2 Cauliflower shredded into Rice
1 Tbsp Apple Cider Vinegar
1 Tbsp Sugar or Sugar Substitute
2 cups cooked Shrimp or 1/2 a bag
1 Tbsp Parsley (optional)

DIRECTIONS:
Heat Frying pan with oil and…

1 Chicken Breast (chopped into pieces), Salt & Pepper, till fully cooked and browned
add in 1 – 2 tsp minced Garlic,
Bell Peppers and Ham, sauté over medium heat, stirring occasionally @ 6-8 minutes
then add in 1 cup Chicken Broth with all seasoning
1 can Diced Tomatoes

*Bring to a bubble, add Cauliflower Rice, and Apple Cider Vinegar
Reduce heat to a low simmer @ 30 minutes. Stirring every so often.
add extra Broth, if too dried out or reduce heat if its bubbling to rapidly….
in the end,….add Sugar, Shrimp, and parsley
and continue to simmer @ 5 minutes
