Carrot, Coconut & Peach Cupcakes

INGREDIENTS

Flour

Baking Soda

Baking Powder

Salt

Sugar or Stevia (sugar substitute)

Cinnamon & Nutmeg

Eggs

Vanilla Extract

Carrots

Canned Peaches

Icing (Cream Cheese & Whip Cream / & Food Coloring (Green & Orange)

Unsweetened Coconut

Cream Cheese

Whipping Cream and add sugar or Sugar substitute

DIRECTIONS:

In one bowl mix dry ingredients
2 cups Flour
1/2 tsp Baking Soda
1 tsp Baking Powder
1 tsp Salt
1/2 cup Sugar or Monk fruit Stevia
1 tsp Cinnamon
1/4 tsp Nutmeg

In a separate bowl mix Wet Ingredients
2 Eggs whisked
1 tsp Vanilla Extract
3 Carrots shredded (I use food processor) reduce carrots then add peaches
2 cup canned Peaches
1/2 – 3/4 Cup Peach Juice

Mix wet and dry ingredients together – don’t over mix just fold till fully incorporated
Place in muffin tins in pre-heated oven 350 degrees for 30-40 minutes
Remove, cool and decorate with Green & Orange Cream Cheese/ whip cream Icing and coconut …….see below
Cream cheese whipped Icing
1/2 Block of Cream Cheese (cut up) 1 – 1/2 cups Whipping Cream and blend till thickened.
take 1/2 and color green (food coloring) and the other 1/2 and color Orange.
Decorate the tops and sprinkle with Unsweetened Coconut.
