INGREDIENTS….. Makes 12 servings
2 Pie Crusts (Make with Tender flake or Crisco Packaging) or (Buy pre-made crusts, in frozen section at the grocery store)
Oil
Tomato
Mushrooms
Spinach leaves
Eggs
Feta Cheese
DIRECTIONS:
Make 2 pie crusts according to Crisco / Tenderflake directions on the box or buy pre-made pie crusts.
I use a sour cream container to cut crust into circles, then add crusts to muffin tins.
Filling
Heat frying pan and add 2 tbsp oil, 1 diced Tomato, 1 cup chopped Mushrooms.
Sauté veggies down a few minutes, then add 1 cup chopped spinach, mix in till wilted
Remove and set aside to cool.
Whisk 6 Eggs to add into the above mixture once cooled down
Mix in ½ cup crumbled feta cheese
Fill pastries….
Bake 350 degrees for 30 – 40mins
