Asparagus Sausage Gravy Frittata

INGREDIENTS

Asparagus

Onion

Slices Mushrooms

Eggs

Country Sausage Gravy

Salt & Pepper

Parsley

Biscuits

Paprika (optional)

DIRECTIONS:

1st Chop & blanch 2 cups Asparagus – set aside (see instructions below)

*Blanch Asparagus – bring a pot of water to a boil, add salt put in asparagus, continue to boil 2-3 mins till slightly Softened

⦁ Next In a separate bowl….chop up
½ Onion diced, 1 cup Sliced Mushroom, 5 eggs whisked, 1 cup canned Country Sausage Gravy, mix well add salt, pepper, 1 tsp Parsley, add asparagus – set aside
⦁ In a baking dish or cast-iron pan add Pam spray or oil the dish well
Take Biscuits, cut them in half and place along the bottom of pan
Pour Vegetables, Asparagus, Egg / Gravy Mixture on top of biscuits
Then sprinkle top with Paprika (optional)
Heat Oven 350 degrees – bake 45 minutes
