Alberta Omelete

INGREDIENTS

6 Slices of Ham / Canadian Bacon

Red, Yellow & Orange Bell Peppers

Broccoli

Salt & Pepper

Butter

Eggs

Milk

Lemon

Green Onion

Pepper Jack Cheese

DIRECTIONS:

In a large frying pan on medium heat…..add Oil
6 slices Canadian Bacon chopped up (bite size)
¼ each Red, yellow & Orange Bell peppers diced
1 cup finely chopped Broccoli, salt & pepper
Sauté in oil the above ingredients 5 -7 mins till vegetables softened.
Add 1tbsp butter
Then whisk together in a bowl 6 Eggs, 2tbsp milk, dash salt & pepper, 1tbsp lemon – add to pan, fully incorporate with all ingredients
Fully cook eggs in omelet.
Turn Heat off and top with 2 chopped Green onion, 1/2 cup Pepper Jack cheese – cover till melted
